Foodie Fulfillment

Hey guys!

I’m sorry for the massive delay. I’m sure you all have been super anxious to see what became of my bread pudding. Well, here it is!

I started out by cutting my 1lb of focaccia bread into inch thick squares. I used a plain bread. I felt that it didn’t need to be seasoned considering I’d be soaking it olive oil after cutting it into cubes. Next, I sliced up my cherry tomatoes into halves and tossed them over the bread. I added my block feta by crumbling it myself over the bread and tomatoes. I finished by adding the rest of the bread to the top.

Next I poured my gooey egg, salt and pepper mixture over the bread, making sure to allow the bread to drink up the egg goo by pressing it down with a fork.

Lastly, I covered the top of it in Parmesan for good measure.

My Dad was so excited for the bread pudding to be done, he kept checking the oven. My house smelled heavenly!

The most exciting part though was pulling that guy out of the oven an hour later and digging in. It tasted absolutely delicious. The egg, cheese, bread, and tomatoes worked together perfectly! Mmm :)

Tomato, Goat Cheese and Focaccia Bread Pudding

This little dish is something I found on Circle B Kitchen’s website and immediately knew I had to try for myself. This bread pudding is definitely unique and has two of my faaavorite ingredients: goat cheese and tomatoes. This will be my first foodie dish, and I am so excited! 

I whipped this up this morning before work, and even though it’s supposed to set over night, I’m hoping that between 9am and 6pm tonight will be enough time for the focaccia bread to soak up all that gooey egg and cream mixture I poured over it.

I took some personal pics of the process and I’ll upload them as well as a final photo after it comes out of the oven. I can’t wait to dig in :)

Purpose
